Lots of big veggies in the share this week. Our field and unheated high tunnel tomatoes are just starting to produce, so we’ll be mixing up the varieties soon. We have four greenhouses on our farm. Two are for seed starting.The other to we mostly use for tomatoes. We do try to maximize our growing space by planting other crops such as beets and lettuce in and among the tomatoes. We included freshly harvested white onions, and peppers, which together with the tomatoes make a delicious salsa. Later in the season we should have fresh cilantro, as long as it germinates well, which is never a guarantee. We recommend including the beet greens with the Swiss chard when cooking. They are very similar plants which taste great when sauteed or in soups. Have a great week!
Garlicky Swiss Chard Pasta
Cook 1/2 lb of pasta in salted boiling water until al dente.
Mince 2 cloves garlic. Finely chop the stems of 1 bunch of Swiss chard and roughly chop the leaves.
In a large skillet add 2 Tbsp cooking oil over medium high heat, then saute 2 cloves minced garlic. Add Swiss chard stems and cook another 2-3 minutes, then add leaves 1 handful at a time. Add 1/4 cup pasta water as leaves cook down. Add cooked pasta and 1 Tbsp of either capers, green olives, artichoke, or anchovy. Cook until pasta is tender, then deglaze with 2-3 Tbsp fresh lemon juice, about 1/2 lemon. Remove from heat and serve with 1-2 Tbsp Parmesan cheese per serving.
Borscht
Dice 1/2 cup onions, and 1/2 cup diced carrot. 1/2 cup finely chopped celery. Dice all of the beets. cook 1 cup of white beans
Add 2 tbsp of olive oil to a large stockpot over medium high heat. Add 1 lb ground pork and saute until pork is cooked through. Add the diced onion, carrot, and celery greens, and saute for about 5 minutes.
Chop half of cabbage, about 1-2 cups. Add white beans, and all the beets diced to the soup. Add 1-2 tsp salt and 2 bay leaves.
Add enough water to cover all vegetables, about 10-14 cups. Bring soup to a boil, reduce heat and cook for 25-30 minutes, or until potatoes and beets are cooked through. Lightly beat 2 eggs and add to soup. Remove bay leaves, and serve soup with a dollop of sour cream or mayonnaise.
salsa
Roughly chop all the sweet peppers, half tomatoes, about 2 medium to small, and 1/2 cup onion. Finely chop 1 jalapeno pepper, removing the seeds and ribs for less heat. Chop 2 cloves garlic and 2 Tbsp of cilantro. Add all ingredients to a food processor along with 2 Tbsp apple cider vinegar, 1/2 tsp salt, 1/4 tsp cumin, and 1/4 tsp ground black pepper. Pulse until desired consistency.
Creamy Citrus Vinaigrette
1/2 cup orange juice (about the juice of one orange), 2 tbsp lemon juice, 3 tbsp olive oil, 3 tbsp mayonnaise, 3/4 tsp salt, 1/2 tsp ground black pepper.
Cabbage stir fry
Chop the cabbage and 1 onion. Chop 1 lb of pork (fillet, loin and leg) into bite sized pieces.
To make sauce combine: 1/2 cup soy sauce, 1/4 cup honey, 1 Tbsp minced ginger, 2 cloves minced garlic, 3 Tbsp ketchup, and 2 tsp sesame oil.
Heat a wok and cook pork in 3 Tbsp oil. Remove pork and set aside. Cook onions, and cabbage until wilted add back the pork and sauce. Simmer until the sauce is thick. Serve over rice.
